Bourbon Bacon Jam

Ingredients
  

  • 2 Cups Yellow onion chopped
  • 1 Lb. Bacon
  • ¼ Cup Balsamic vinegar
  • ¼ Cup Brown sugar
  • 2 Tablespoons Maple syrup
  • 1 Ounce Bourbon

Instructions
 

  • Cut the bacon into thin strips and add to skillet.
  • Cook on medium for about 10 minutes until the fat renders and the bacon is slightly crispy.
  • Reserve 2-3 tablespoons of the bacon grease and drain the rest.
  • Add the onions to the skillet with the 3 tablespoons of bacon grease and cook until the onions start caramelizing, about 5-10 minutes.
  • Add the bourbon and scrape the caramelized bits from the bottom of the skillet. Allow the alcohol to cook down for 1-2 minutes.
  • Add the balsamic vinegar, sugar and maple syrup.
  • Return the bacon to the bacon to the skillet and cook for about 10 more minutes, reducing the heat to medium-low.
  • Remove from the heat and add to a mason jar and blend the jam using an immersion blender, pulsing 2 to 3 times.
  • Serve with crackers, cheese or add to your favorite sandwich or burger.
  • Store in an airtight container in the fridge for up to one week.
