Hasselback potatoes

These hasselback potatoes are an impressive side dish that is really easy to make and absolutely delicious.

Ingredients
  

  • 4 Yukon Gold potatoes
  • ½ cup Butter Softened, unsalted
  • 3 Garlic cloves Minced
  • 2 Tablespoons Chives Chopped
  • 2 Tablespoons Parsley Chopped
  • ½ teaspoon Salt or to taste
  • ¼ teaspoon Pepper or to taste
  • 1 Tablespoon Vegetable oil

Instructions
 

  • Preheat the oven to 400 Fahrenheit.
  • Place the chopsticks down on your cutting board parallel to each other. Set one potato down, running lengthwise between the chopsticks.
  • Start cutting slits in the potato about ¼ inch thick from left to right. Repeat the process with all the potatoes.
  • Rub the potatoes with the vegetable oil, sprinkle with salt to taste.
  • Place the potatoes in a baking sheet and bake for 30 minutes.
  • While the potatoes bake, make the compound butter by mixing the softened butter, minced garlic, chives, parsley, salt and pepper.
  • Place the butter mixture in plastic wrap and create a log by closing the ends tightly. Refrigerate for at least 30 minutes.
  • After 30 minutes, cut slivers of the herbed butter to add to each of the potato slits.
  • Remove the potatoes from the oven and add the butter. Return to the oven and bake for another 30 minutes.
  • Serve and enjoy.

Notes

You will have some leftover butter. It is great to add on top of your steak or a piece of bread.
