Yukon Gold potatoes

Softened, unsalted

Instructions
Preheat the oven to 400 Fahrenheit.
Place the chopsticks down on your cutting board parallel to each other. Set one potato down, running lengthwise between the chopsticks.
Start cutting slits in the potato about ¼ inch thick from left to right. Repeat the process with all the potatoes.
Rub the potatoes with the vegetable oil, sprinkle with salt to taste.
Place the potatoes in a baking sheet and bake for 30 minutes.
While the potatoes bake, make the compound butter by mixing the softened butter, minced garlic, chives, parsley, salt and pepper.
Place the butter mixture in plastic wrap and create a log by closing the ends tightly. Refrigerate for at least 30 minutes.
After 30 minutes, cut slivers of the herbed butter to add to each of the potato slits.
Remove the potatoes from the oven and add the butter. Return to the oven and bake for another 30 minutes.
Serve and enjoy.
Notes
You will have some leftover butter. It is great to add on top of your steak or a piece of bread.
