Ingredients
  

  • 20 Ounces Frozen chopped spinach 2 (10 ounce) bags. Thawed and squeezed.
  • 5 Ounces Boursin Cheese Garlic and herbs flavor. 1 round of cheese.
  • ½ cup Heavy cream
  • ½ cup Vegetable stock
  • 1 Tablespoon All purpose flour
  • 1 Tablespoon Avocado oil or vegetable oil
  • ½ Teaspoon Salt

Instructions
 

  • Thaw the frozen spinach and squeeze the excess liquid.
  • In a skillet add the avocado oil and the spinach. Add the salt and sauté it for about 1 minute over medium-high heat.
  • Add the flour and the vegetable stock.
  • Add the Boursin cheese and using a wooden spoon mix it well with the spinach until well incorporated.
  • Reduce the heat to medium and add the heavy cream.
  • Let it cook for about 3-4 minutes until the sauce starts to thicken up.
  • Transfer to a serving dish and enjoy.
