- 20 Ounces Frozen chopped spinach 2 (10 ounce) bags. Thawed and squeezed.
- 5 Ounces Boursin Cheese Garlic and herbs flavor. 1 round of cheese.
- ½ cup Heavy cream
- ½ cup Vegetable stock
- 1 Tablespoon All purpose flour
- 1 Tablespoon Avocado oil or vegetable oil
- ½ Teaspoon Salt
Thaw the frozen spinach and squeeze the excess liquid.
In a skillet add the avocado oil and the spinach. Add the salt and sauté it for about 1 minute over medium-high heat.
Add the flour and the vegetable stock.
Add the Boursin cheese and using a wooden spoon mix it well with the spinach until well incorporated.
Reduce the heat to medium and add the heavy cream.
Let it cook for about 3-4 minutes until the sauce starts to thicken up.
Transfer to a serving dish and enjoy.
