This salmon sushi bake is a spin on a sushi roll that is baked in a casserole dish with all the delicious sushi flavors and toppings.
It combines tender flaky salmon with a spicy mayo made with sriracha, cream cheese and Japanese mayo over seasoned sushi rice.
It is topped with avocado slices, scallions, furikake and more mayo and sriracha.
Served with seaweed and cucumber sticks, it is the best sushi casserole.

Ingredients
  

  • 2 cups salmon flaked
  • 4 cups sushi rice cooked and seasoned
  • 1 avocado
  • 2 cucumbers Small or 1 big
  • ¼ cup mayonnaise Kewpie Japanese mayo
  • 4 ounces cream cheese ½ block
  • 2 Tablespoons Sriracha or to taste
  • 12 Seaweed squares

Garnishes

  • 1 Tablespoon mayonnaise
  • 1 Tablespoon Sriracha
  • 2 Tablespoons Furikake
  • 2 Tablespoon Scallions chopped
  • Soy sauce
