    Mississippi Sloppy Joe on Texas Toast

    This ground beef Mississippi sloppy Joe on Texas Toast is a quick dinner that is easy to make and the whole family will enjoy.

    This is a quick and easy dinner idea that will be on repeat on your weekly menu.

    Recipe highlights

    Ingredients:

    • Ground beef: Use any fat ratio you like, just be aware that you will need to drain the fat from the beef once cooked.
    • Au jus seasoning packet: I used the McCormick brand.
    • Ranch seasoning packet: I used the Valley ranch brand.
    • Pepperoncini peppers: these are very mild and don't add much heat to this dish but a nice brightness to lighten up this dish.
    • Texas toast: I used the ALDI brand garlic Texas toast and really enjoyed it.
    • Butter: Use unsalted butter since the au jus and ranch seasonings have plenty of salt.
    • Broth: I used beef broth but feel free to use water or vegetable broth instead.
    • Cheese: I used sliced provolone cheese to top the toast but use any melty cheese you prefer such as mozzarella, Colby jack or cheddar.

    Instructions

    Start by dicing the pepperoncini peppers, that way everything is ready to go as this recipe comes together so quickly.

    In a skillet add the beef, ranch seasoning and au jus and allow it cook until the beef is nicely browned. Remove some of the excess fat from the ground beef by draining it to a heat-proof container.

    Cook the Texas toast according to the package instructions.

    Add the diced pepperoncini peppers, some of the pepper juice and beef broth.

    Finish with a few tablespoons of butter.

    Place the beef on top of the toast and add a slice of cheese. Use the broiler for 2-3 minutes on high to melt the cheese, serve and enjoy.

    Serving suggestions

    Add a side salad to this meal and you have a well rounded, delicious and nutritious dinner.

    Some fresh carrots and celery sticks with a side or ranch will also add a nice crunch and freshness to this dinner.

    Storage

    If you have any leftovers, store individually in airtight containers and refrigerate. The beef will last in the fridge for up to 3 days.

    To reheat simply add the beef to a skillet with some water or broth (¼ cup) until heated through, about 4-5 minutes over medium heat.

    My favorite way to reheat the toast is in the air fryer at 400F for 2 minutes.

    Ingredients
      

    • 1 lb. Ground beef
    • 1.5 tablespoons Au Jus seasoning ½ of a 1 OZ packet.
    • 1.5 tablespoons Ranch seasoning ½ of a 1 OZ packet.
    • ¼ cup Peperoncini peppers diced, about 5 peppers
    • ¼ cup Peperoncini peppers juice
    • ½ cup Beef broth
    • ¼ cup unsalted butter ½ stick
    • 1 box Texas toast 8 slices
    • 8 slices Provolone cheese

    Instructions
     

    • In a skillet over medium-high heat combine the ground beef, au jus and ranch seasonings. Cook until the beef is lightly browned and the fat is rendered, about 5-10 minutes.
      1 lb. Ground beef, 1.5 tablespoons Au Jus seasoning, 1.5 tablespoons Ranch seasoning
    • Drain the excess fat by tilting the skillet and carefully spooning the liquid into a heat-proof container. 
    • Return the skillet to the stove and add the Peperoncini peppers juice, the diced Peperoncini and beef broth. Simmer for 2-3 minutes.
      ¼ cup Peperoncini peppers, ¼ cup Peperoncini peppers juice, ½ cup Beef broth
    • Add the butter and cook until it melts.
      ¼ cup unsalted butter
    • Cook the Texas Toast according to the box instructions. Mine cooked at 425F for 3 minutes.
      1 box Texas toast
    • Add the beef mixture on top of the toast, add the sliced cheese and broil on high for 2-3 minutes until the cheese is melty.
      8 slices Provolone cheese
    • Serve and enjoy.

    Notes

    This dinner serves 4 people. 2 slices of bread per person.
