Basic Avocado Toast on Sourdough

Ingredients
  

  • 2 slices sourdough bread about ½ inch thick slice
  • 1 medium avocado
  • ½ tablespoon lemon or lime about ½ medium lemon or lime
  • ¼ teaspoon kosher salt or to taste
  • pepper to taste
  • 2 eggs
  • ½ teaspoon avocado oil
  • teaspoon kosher salt just a pinch
  • ½ teaspoon everything but the bagel seasoning

Instructions
 

  • Toast the sourdough bread for about 2-3 minutes. I like mine slightly toasted but still soft.

  • In a bowl mash the avocado with the lemon juice, salt and pepper.
    1 medium avocado, ½ tablespoon lemon or lime, ¼ teaspoon kosher salt, pepper
  • In a frying pan add the avocado oil and fry the eggs to your desired doneness.
    2 eggs, ½ teaspoon avocado oil, ⅛ teaspoon kosher salt
  • Spread the avocado mash over the toasted sourdough. Place the egg on top and finish with the everything but the bagel seasoning. Serve and enjoy.
