Burrata and Peach Sandwich

One of the best parts of this sandwich is the contrast between the sweet peaches and the creamy burrata. The sourdough holds everything together while the balsamic glaze adds acidity and a little tang.

Ingredients
  

  • 1 cup arugula
  • 1 teaspoon olive oil
  • ½ juice and zest of ½ lemon
  • salt and pepper to taste
  • 1 slice sourdough bread
  • ½ peach medium size, pitted and sliced
  • 4 oz burrata cheese about half a ball of burrata
  • ½ tablespoon Balsamic glaze or to taste

Instructions
 

  • In a small bowl combine the arugula, lemon zest, lemon juice, olive oil, salt and pepper. Massage for 30 seconds and set aside.

  • Thinly slice half a peach.

  • Layer the arugula onto the sourdough. Place the peaches on top and drizzle with the balsamic glaze.

  • Tear the burrata ball and spread it generously over the peaches, I used half of a burrata ball but feel free to use it all.
    4 oz burrata cheese
  • Finish with a sprinkle of flaky sea salt and freshly ground black pepper. Top with the remaining sourdough slice.
  • Cut the sandwich in half. Serve immediately and enjoy.
