Burrata, Fig and Prosciutto Sandwich

Saying goodbye to summer with this epic Burrata, Fig and Prosciutto Sandwich while squeezing out the last bits of flavor from late summer produce.

Ingredients
  

  • 2 slices sourdough bread
  • 3 figs sliced in half
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 thyme sprig
  • 2 tablespoons pesto
  • 2 tablespoon fig jam
  • 4 oz burrata
  • 3 slices prosciutto
  • ½ cup arugula
  • ½ teaspoon olive oil
  • ½ teaspoon red wine vinegar
  • salt and pepper to taste

Instructions
 

  • Toast the sourdough bread and set aside.

  • Add the figs, cut side down to a skillet with the oil, honey, butter and thyme. Cook 3 minutes

  • Layer the sourdough with pesto on one side and fig jam on the other.
    2 tablespoons pesto, 2 tablespoon fig jam
  • Toss the arugula with the oil and vinegar. Add salt and pepper to taste.
    ½ cup arugula, ½ teaspoon olive oil, ½ teaspoon red wine vinegar
  • Layer the burrata on top of the arugula and split it open to reveal the creamy inside.
    4 oz burrata
  • Layer the prosciutto and the caramelized fresh figs.
    3 slices prosciutto
  • Top with the slice of bread with fig jam, cut and enjoy.
