This tender and flaky cod is cooked in parchment paper with lemon, tomatoes and dill and baked to perfection.

Ingredients
  

  • 1 lb. cod
  • 1 ½ teaspoon salt kosher
  • 1 lemon sliced
  • 1 cup cherry tomatoes
  • 1 tablespoon dill
  • pepper to taste, freshly ground

Instructions
 

  • Place the cod fillet on a piece of parchment paper big enough to encase the fillet.
    1 lb. cod
  • Season with salt and pepper.
    1 ½ teaspoon salt, pepper
  • Add the lemon slices, tomatoes and dill.
    1 lemon, 1 cup cherry tomatoes, 1 tablespoon dill
  • Bake at 350F for 15-20 minutes depending of the thickness of the fish. Check for an internal temperature on the thickets part of the fillet of 135F.
  • Serve over rice and enjoy immediately.
