In a heavy bottom soup pot add the oil and onions and cook over medium-high heat. Cook for about 7-8 minutes stirring often to avoid overcooking.
2 tablespoons avocado oil, ½ onion
Add the butter and carrots and cook for another 3 minutes.

Add the basil and allow it to cook for about 2 minutes.
1 tablespoon dried basil
Add the tomatoes and broth and bring to a boil.
1 28 oz can crushed tomatoes, 1 28 oz can fired roasted tomatoes, 2 cups chicken broth
Reduce the heat slightly and allow the soup to simmer for about 10 minutes. Add salt.
3 teaspoons kosher salt
Remove from the heat and carefully blend the soup, opening a vent to allow steam to release. Ideally blend in 2-3 batches on low speed.
Return the soup to the pot, stir in the cream and serve.
¾ cup heavy cream
Serve and garnish with fresh basil leaves.
