Thaw the puff pastry according to package instructions. Once thawed preheat oven to 400°F (200°C).
Prepare a baking sheet with parchment paper.
Slice the peaches in half and remove the pit. Using a sharp serrated knife cut each half into thin slices.

Cut the puff pastry into 8 equal size rectangles. I cut each sheet of puff pastry in half to get 8 equal size pieces.

Place 3-4 peach slices and top with a sheet of puff pastry to cover. Gently press down, use a fork around the edges to seal and repeat with the remaining peaches and puff pastry squares. Leave about ½ inch space in between each tart.
Bake for 15 minutes, rotating the baking sheet half way. If needed add more time in 2 minute increments until the puff pastry is golden brown. I baked for 20 minutes.
With a spatula place the puff tarts on a platter peaches side up.
Cut the burrata balls into 4 pieces and place them of top of the warm peaches.

Drizzle with honey and garnish with thyme and flake sea salt.
