In a large pot, heat your olive oil and butter. Add in your onion and cook until translucent, tender and beginning to caramelize for about 5-6 minutes.
1 tablespoon unsalted butter, 1 tablespoon olive oil, 1 medium yellow onion
Add the garlic and cook for 1 minute until fragrant.

Add in your Italian sausage and cook until lightly browned.
1 lb Italian Sausage
Pour in your crushed tomatoes and chicken broth. Season with salt and pepper to taste. Simmer uncovered, for 20-30 minutes.
1 28 oz can crushed tomatoes,
4 cups low-sodium chicken broth, Salt and pepper to taste.
Pour in your tortellini and spinach. Simmer for another 3-4 minutes, until your tortellini is tender.
1 lb cheese tortellini, 2 cups spinach
Reduce the heat to low, add the cream and stir well.
½ cup heavy cream
Serve and enjoy.
