Instructions
Make the sweet potatoes
In a small bowl combine the seasonings.
½ teaspoon kosher salt, ½ teaspoon garlic, ½ teaspoon dried rosemary, ¼ teaspoon smoked paprika, ¼ teaspoon ground cinnamon
Drizzle the potatoes with the oil and coat with the seasoning mixture.
2 cups sweet potatoes, 1 tablespoon avocado oil
Air fry them at 400°F for 12 minutes flipping them half way thru. Reduce the temperature to 350°F and cook for another 5 minutes. Spray more oil as needed.
Cook the beef
Add the oil to a skillet and cook the onion over medium-high heat for about 5 minutes until translucent and fragrant.

Add the minced garlic and cook for one more minute.

Add the tomato paste and cook until it gets dark in color, about 2-3 minutes.

Add the beef and taco seasoning and cook until the beef is no longer pink. About 5-6 minutes.
1 packet mild taco seasoning, 1 lb ground beef
Build the bowls
Add ½ cup of cottage cheese to each bowl.

Add beef and sweet potatoes, diced avocado and a drizzle of hot honey.

Notes
If you dislike the texture of cottage cheese, you can blend it with an immersion blender to make it into a smooth dip.
