Ingredients

- Sourdough bread: You can use store-bought but I have a beginner friendly basic sourdough recipe that you can use. I recommend sourdough because it is sturdy and can handle the weight of the toppings, plus it has amazing flavor!
- Ripe avocado: Pick an avocado that is perfectly ripe (not too soft, not too hard). Better yet buy your avocado when is unripe and let it sit on your kitchen counter for 1-2 days until it softens. If your avocado is too soft it will be bruised.
- Everything but the bagel seasoning: This is optional but adds a ton of flavor and a lovely texture.
- Lime/lemon: I like to add a squeeze of lemon to the avocado to amply the flavor.
- Fried egg: highly recommend adding a fried egg (to a soft boiled egg) to pack this avocado toast with protein. Smoked salmon or cottage cheese are also great alternatives.
- Garlic: Finely grated garlic is optional but highly recommended, a small clove goes a long way.
Step by step instructions
Toast the sourdough
I like to lightly toast my sourdough bread with a drizzle of olive oil. I usually toast it in my air fryer at 350F for about 3-4 minutes. You can also use a skillet to lightly brown the sourdough.
Mash the avocado
I like to mash the avocado in a small bowl with a little bit of salt, lemon or lime and a bit of grated garlic.
Cook the egg
I like to cook my egg over medium but you can also make it scrambled, soft boiled or even hard boiled.
Add toppings
I like to add the everything but the bagel seasoning that includes some garlic, sesame seeds and salt. You can keep it simple with some flaky salt and pepper.

Basic Avocado Toast on Sourdough
This avocado toast is a perfect way to enjoy breakfast
Ingredients
- 2 slices sourdough bread about ½ inch thick slice
- 1 medium avocado
- ½ tablespoon lemon or lime about ½ medium lemon or lime
- ¼ teaspoon kosher salt or to taste
- pepper to taste
- 2 eggs
- ½ teaspoon avocado oil
- ⅛ teaspoon kosher salt just a pinch
- ½ teaspoon everything but the bagel seasoning
Instructions
- Toast the sourdough bread for about 2-3 minutes. I like mine slightly toasted but still soft.2 slices sourdough bread
- In a bowl mash the avocado with the lemon juice, salt and pepper.1 medium avocado, ½ tablespoon lemon or lime, ¼ teaspoon kosher salt, pepper
- In a frying pan add the avocado oil and fry the eggs to your desired doneness.2 eggs, ½ teaspoon avocado oil, ⅛ teaspoon kosher salt
- Spread the avocado mash over the toasted sourdough. Place the egg on top and finish with the everything but the bagel seasoning. Serve and enjoy.½ teaspoon everything but the bagel seasoning
