    Brisket Grilled Cheese

    Smoked brisket, thick sourdough bread slices, smothered with mozzarella and gouda and topped with pickled jalapeños makes the ultimate sandwich.

    When I have leftover smoked brisket, this sandwich is always my first option. It is delicious and packed with the smoked flavors of your favorite BBQ.

    Ingredients

    • Brisket: Smoked brisket is my favorite way to eat this cut of meat.
    • Sourdough bread: I always use my homemade sourdough bread. I love that I can cut it into thick slices to hold up all the toppings. My bread slicer is one of my favorite recent purchases.
    • Mayo and BBQ sauce: These two condiments create the perfect flavor on our sandwich. I like to jazz up my bbq sauce with guava jam for a fruity touch.
    • Cheese: I used a blend of freshly grated mozzarella and gouda cheese. Of course use any melty cheese you like.
    • Pickled onions and jalapeños: This sandwich is indulgent. The fatty brisket, the cheese, mayo and BBQ sauce are pretty rich. Adding the pickled jalapeños and red onions adds a perfect tang that will have you looking forward to those bites.

    Instructions

    Start by grating your cheese. You will need about ½ cup mozzarella and ¼ cup gouda cheese.

    Speed the mayo on one side of each slice, these 2 sides will be the outer sides of the grilled cheese.

    Spread the BBQ on the other side of the slices. Place the cheese and brisket on one side and top it with the jalapeños and onions.

    Top with the other slice of bread.

    Cheddar and pepper jack cheese would also be a great duo in this sandwich.

    Ingredients
      

    • 2 sourdough bread slices
    • 2 tablespoons mayo
    • 2 tablespoons BBQ sauce
    • ½ cup mozzarella shredded
    • ¼ cup gouda shredded
    • 3 slices brisket
    • 1 tablespoon pickled onions
    • 1 tablespoon pickled jalapeños

    Instructions
     

    • Spread mayo on one side of each slice of bread.
      2 sourdough bread slices, 2 tablespoons mayo
    • Add BBQ sauce to the other two sides. Place the bread slices BBQ side up on a plate to assemble the sandwich.
      2 tablespoons BBQ sauce
    • Add a layer of the cheeses on one side of the bread.
      ½ cup mozzarella , ¼ cup gouda
    • Top with the brisket slices.
      3 slices brisket
    • Finish with slices of pickled jalapeno and pickled red onions.
      1 tablespoon pickled onions, 1 tablespoon pickled jalapeños
    • Place on a hot cast iron skillet or frying pan. Press the sandwich down with a spatula or a manual sandwich press. Cook about 3 minutes per side.
    • Cover the sandwich with lid to create some steam and allow the cheese to melt. Alternately, place in an air fryer for about 5 minutes until the cheese is fully melted.
    • Slice in half and enjoy
