    Grilled Peaches

    These simple grilled peaches are the perfect way to enjoy a dessert that is easy, delicious and highlights summer's produce.

    These fresh peaches are at their peak during the months of July and August and they really don't need a lot of jazzing up to shine.

    You will love grilled peaches because adding a little heat and sugar caramelizes them and makes them tender and sweet.

    Ingredients

    • Peaches: Pick fruit that is ripe but not overly soft. As they cook the peaches will soften so pick some that lightly give in when pressured.
    • Oil: Avocado oil is my go to here because we are using high heat.
    • Sugar: Regular sugar or brown sugar work well here.
    • Cinnamon: A sprinkle of cinnamon add nice warmth to the peaches.
    • Ice cream: To serve them
    • Pistachios: To garnish.

    Instructions

    Step 1: Cut the peaches

    Cut each peach in half through the stem and remove the pit. Place the halves in a bowl toss with the oil and reserve.

    Step 2: Make the cinnamon sugar

    Combine the cinnamon and sugar and whisk to mix well. Sprinkle on the flesh side of the peaches.

    Step 3: Grill the peaches

    I used a grill pan to cook the peaches over high heat for about 4 minutes flesh side down and 2 minutes on the other side.

    Step 4: Garnish and serve

    Serve the peaches with a scoop of ice cream and garnish them with chopped pistachios.

    Ingredients
      

    • 4 peaches ripe but firm, halved and pitted
    • 2 tablespoons avocado oil
    • 1 tablespoon granulated sugar
    • ¼ teaspoon cinnamon
    • 2 cups vanilla ice cream
    • 1 tablespoon pistachios unsalted, chopped
    • mint leaves for garnish

    Instructions
     

    • Cut the peaches in half around the stem and remove the pit.

    • Add the peach halves to a bowl and coat them with the avocado oil.
      2 tablespoons avocado oil
    • Preheat your grill pan over medium high heat until the pan is hot about 3-5 minutes.
    • In a bowl combine the sugar and cinnamon and whisk to incorporate well.
      1 tablespoon granulated sugar, ¼ teaspoon cinnamon
    • Sprinkle each peach half on the flesh side with about ¼ teaspoon of the cinnamon sugar mix.
    • Place flesh side down on the hot grill pan and cook for about 3-4 minutes on that side until browned grill mark appear. Turn the peaches with tongs and cook on the other side for 1-2 minutes.
    • Serve each peach half with about ¼ cup of vanilla ice cream and garnish with pistachios and mint.
      2 cups vanilla ice cream, 1 tablespoon pistachios, mint leaves
    • Serve and enjoy immediately.
