    Hasselback Potatoes

    These hasselback potatoes are an impressive side dish that is really easy to make and absolutely delicious.

    I saw this recipe on TikTok by Cassie Yeung from Next Level Chef. She added a delicious compound butter to the hasselback potatoes and it really elevates them.

    Jamie Oliver, the famous British chef also popularized the hasselback potatoes.

    This hasselback potatoes are simple! They only requires a handful of ingredients including butter, herbs and garlic.

    These baked hasselback potatoes turn crispy on the outside and the inside is soft and buttery, truly the best of both worlds.

    You can customize these potatoes and add your favorite toppings but the simple flavored butter alone is amazing!

    Ingredients

    In Cassie's TikTok recipe she recommends Yukon gold potatoes because they lend themselves perfectly for that buttery consistency.

    • Potatoes: Choose a variety that is very starchy such as gold potatoes.
    • Butter: You can use salted or unsalted butter to create an herbed compound butter that is rich and flavorful.
    • Garlic: It is the classic aromatic in the kitchen and it adds incredible flavor to the potatoes.
    • Parsley: This herb adds a bright pop of freshness the butter and compliments the potatoes so well. Use it in the butter and as a garnish when serving.
    • Chives: This tiny onions are great to add hint of flavor without being overpowering.
    • Sour cream: This is great finish the potatoes and garnish with some extra parsley.

    To make these Hasselback potatoes you will need a pair of chopsticks to prevent you from cutting the potatoes all the way through.

    You can alternatively use 2 wooden spoon handles to accomplish the task. Just place each potato in between the two wooden spoons and make slits.

    To make the compound herbed butter you need softened butter, garlic, chives, parsley, salt and pepper.

    How long these hasselback potatoes take to cook will depend on the size of your potatoes and how crispy you want the outside to be.

    A good ballpark baking time for this hasselback potatoes is about 60 minutes.

    Serving suggestions

    What do you serve with hasselback potatoes? One of my favorite ways to serve these potatoes is with a good steak and a Caesar salad.

    These potatoes go well with pretty much any protein you choose; from fish to chicken, they are the perfect side dish.

    Storage and reheating instructions

    These potatoes reheat like a dream!

    Store them in an airtight container in the fridge for uptown 4 days.

    To reheat them, spray them with a little bit of oiler brush a little butter on them.

    Use the oven at 250F and reheat for about 10 minutes, if you want to crisp them up a little bit, broil them on low for 1-2 minutes.

    Ingredients
      

    • 4 Yukon Gold potatoes
    • ½ cup Butter Softened, unsalted
    • 3 Garlic cloves Minced
    • 2 Tablespoons Chives Chopped
    • 2 Tablespoons Parsley Chopped
    • ½ teaspoon Salt or to taste
    • ¼ teaspoon Pepper or to taste
    • 1 Tablespoon Vegetable oil

    Instructions
     

    • Preheat the oven to 400 Fahrenheit.
    • Place the chopsticks down on your cutting board parallel to each other. Set one potato down, running lengthwise between the chopsticks.
    • Start cutting slits in the potato about ¼ inch thick from left to right. Repeat the process with all the potatoes.
    • Rub the potatoes with the vegetable oil, sprinkle with salt to taste.
    • Place the potatoes in a baking sheet and bake for 30 minutes.
    • While the potatoes bake, make the compound butter by mixing the softened butter, minced garlic, chives, parsley, salt and pepper.
    • Place the butter mixture in plastic wrap and create a log by closing the ends tightly. Refrigerate for at least 30 minutes.
    • After 30 minutes, cut slivers of the herbed butter to add to each of the potato slits.
    • Remove the potatoes from the oven and add the butter. Return to the oven and bake for another 30 minutes.
    • Serve and enjoy.

    Notes

    You will have some leftover butter. It is great to add on top of your steak or a piece of bread.
