Peel the plantains and dice them into ½ inch pieces.
Coat them with the oil on all sides and place directly in the air fryer basket.
Air fry at 350°F for 8 minutes, flipping them half way thru or until they are golden brown.
Serve with your favorite bowl, scrambled eggs or hearty soup.

Plantains are typically found in the grocery store by the bananas, coconut and tropical fruit.If you buy a green plantain you can make tostones instead of maduros (sweet plantain) or allow it to ripen on your countertop for 4-5 days until the skin turns dark yellow.The darker the skin on the plantain the sweeter it will be. The plantains should also be soft to the touch (like avocados).
