In a skillet, over medium-high heat, add the olive oil and toast the sourdough bread until golden brown.

Thinly slice the peaches with a serrated knife to make sure not to smush them. About 12 slices.

Use a small paring knife to cut the outer casing of the burrata and reveal the creamy filling. Place one of the creamy burrata balls on top of one slice of toasted sourdough.

Season with flakey salt and pepper and drizzle with 1 tablespoon of honey per toast.

Tear 2 prosciutto slices and add them to one toast. Repeat with the other 2 slices.
