    Burrata Cheese Toast with Peaches

    This Burrata Cheese Toast with sweet and juicy peaches is the best balance of sweet and savory summer flavors.

    This appetizer is elegant and effortless and the combination of flavors is truly delicious.

    Think creamy burrata cheese on a sturdy bread such as toasty sourdough paired with juicy peaches that are perfectly sweet and finished with a drizzle of honey.

    This magical combination of textures and flavors will hit every note–sweet, savory, creamy, and crisp in each bite.

    Ingredients

    • Burrata cheese: This creamy cheese is made out a firm mozzarella casing and a creamy filling made of mozzarella and cream(straciatella).
    • Peaches: When peak season peaches are abundant, there is not much jazzing up they need, they truly shine effortlessly this time of the year.
    • Prosciutto: This Italian cured ham is thinly sliced and adds lots of flavor to this appetizer. It is great when paired with sweet fruits to balance its natural salty flavor.
    • Sourdough bread: I love my homemade sourdough bread but feel free to use a baguette or any other sturdy bread.
    • Olive oil: I like to toast my bread with a drizzle of extra virgin olive oil.
    • Honey: Adds a hint of sweetness to the burrata and compliments the natural sweetness of the peaches.
    • Balsamic glaze: Adds a little tangy flavor.
    • Basil: For freshness and a beautiful pop of color.
    • Flakey salt: Not much is needed here since the prosciutto lends a sharp salty flavor but I always like to add a few pinches of salt to highly the sweet flavors.
    • Chopped pistachios: They are another layer of flavor and a textural element to keep every bite interesting. Use unsalted pistachios.

    Instructions

    Step 1: Toast the bread

    In a skillet add some olive oil and toast the sourdough bread until golden brown.

    Step 2: Slice the peaches

    Thinly slice the peaches with a serrated knife to make sure not to smush them.

    Step 3: Cut the burrata

    Use a small paring knife to cut the outer casing of the burrata and reveal the creamy filling.

    Step 4: Assemble the toast

    Place the creamy burrata on top of the toasted sourdough. Season with flakey salt and pepper and drizzle with honey.

    Add the sliced peaches on top and drizzle with the balsamic glaze. Add a few fresh basil leaves and crushed pistachios.

    Ingredients
      

    • 2 sourdough slices
    • 2 tablespoon olive oil
    • 1 peach
    • 8 oz burrata
    • 2 tablespoons honey
    • ¼ teaspoon flaky salt
    • 1 pinch black pepper
    • 4 prosciutto slices
    • 1 tablespoons balsamic glaze
    • 2 tablespoons pistachios unsalted, chopped
    • 4 basil leaves

    Instructions
     

    • In a skillet, over medium-high heat, add the olive oil and toast the sourdough bread until golden brown.
      2 sourdough slices, 2 tablespoon olive oil
    • Thinly slice the peaches with a serrated knife to make sure not to smush them. About 12 slices.
      1 peach
    • Use a small paring knife to cut the outer casing of the burrata and reveal the creamy filling. Place one of the creamy burrata balls on top of one slice of toasted sourdough. 
      8 oz burrata
    • Season with flakey salt and pepper and drizzle with 1 tablespoon of honey per toast.
      ¼ teaspoon flaky salt, 1 pinch black pepper, 2 tablespoons honey
    • Tear 2 prosciutto slices and add them to one toast. Repeat with the other 2 slices.
      4 prosciutto slices
    • Drizzle half tablespoon of balsamic glaze per toast.
      1 tablespoons balsamic glaze
    • Garnish each toast with one tablespoon of crushed pistachios and basil leaves.
      2 tablespoons pistachios, 4 basil leaves
