Guacasalsa is the perfect combination of a fresh tomatillo salsa blended with guacamole; it is creamy, zesty and totally delicious.

Equipment

  • 1 Immersion Blender optional
  • 1 jar with lid for storage

Ingredients
  

  • 6 tomatillos medium size
  • 1 Chile de arbol optional, more to taste.
  • ½ avocado
  • 2 cloves garlic
  • ¼ white onion
  • 1 tablespoon cilantro chopped, more to taste
  • salt to taste
  • ½ lime

Instructions
 

  • Remove the tomatillos from their husk and wash throughly with warm water.
  • In a small heavy bottom pot, over medium heat add the tomatillos and Chile de arbol and enough water to cover them.
    6 tomatillos, 1 Chile de arbol
  • Bring the pot to a boil and cook the tomatillos for 7-8 minutes until they are pale in color.
  • Remove from the heat and add them to a blender or mason jar if using the immersion blender.
  • Add the avocado, garlic, onion, lime juice and cilantro and blend until smooth.
    ½ avocado, 2 cloves garlic, ¼ white onion, 1 tablespoon cilantro, salt to taste
  • Taste for salt as needed.
  • Store it in a jar with lid in the fridge for up to a week.

Notes

If you can't find Chile de arbol you can add a few jalapeño slices, Serrano pepper or a pinch of red chili flakes.
