Guacasalsa is the perfect combination of a fresh tomatillo salsa blended with guacamole; it is creamy, zesty and totally delicious.

This mashup between a green Mexican salsa and guacamole creates a new condiment that is perfect to serve with tacos, bowls and can even double as a salad dressing.

This guacasalsa is a typical condiment in many countries such as Mexico and Venezuela. When I found out that Trader Joe's had a version of this salsa I knew I had to replicate it at home.

Guacasalsa is great for many reasons:
- It is easy to make! It is ready in less than 15 minutes.
- You can prepare it ahead of time.
- It is a great addition to make your meals more exciting and colorful.
- It does not require any oils or cream to make this a creamy condiment.
Ingredients
- Tomatillos: You can find tomatillos at any well-stocked grocery store. They are small, green tomato-like fruits that come in a husk.
- Cilantro: Since it is traditional in guacamole and salsa verde, cilantro is a must in this recipe.
- Onion: Any variety works but I like using white onions here to give the salsa a more punchy flavor.
- Garlic: Depending on how big your garlic cloves are, I like to start with 1 to begin and adjust to taste. I do like a garlicky flavor so I usually add 2 big cloves.
- Lime: Using lime juice brightens up this salsa and brings all the ingredients together in a harmony.
- Avocado: use a full mid-size avocado for a salsa that is creamy and thick. If you want a more fluid salsa, use a ½ avocado.
- Chile de arbol: I love Chile de arbol for its punchy heat that lingers just enough to give you a bit of zing without numbing your mouth. You could use Serrano or jalapeño here as well or leave it out if you don't want it spicy.

Storage
Keep this salsa/dressing refrigerated in glass jar with with a lid. It keep well for up to a week.

Guacasalsa recipe
Equipment
- 1 Immersion Blender optional
- 1 jar with lid for storage
Ingredients
- 6 tomatillos medium size
- 1 Chile de arbol optional, more to taste.
- ½ avocado
- 2 cloves garlic
- ¼ white onion
- 1 tablespoon cilantro chopped, more to taste
- salt to taste
- ½ lime
Instructions
- Remove the tomatillos from their husk and wash throughly with warm water.
- In a small heavy bottom pot, over medium heat add the tomatillos and Chile de arbol and enough water to cover them.6 tomatillos, 1 Chile de arbol
- Bring the pot to a boil and cook the tomatillos for 7-8 minutes until they are pale in color.
- Remove from the heat and add them to a blender or mason jar if using the immersion blender.
- Add the avocado, garlic, onion, lime juice and cilantro and blend until smooth.½ avocado, 2 cloves garlic, ¼ white onion, 1 tablespoon cilantro, salt to taste
- Taste for salt as needed.
- Store it in a jar with lid in the fridge for up to a week.
