Salmon
- 1 1 lb Salmon 
 - 1 tablespoon Dijon mustard
 - 1 Lemon Zest and juice
 - 1 teaspoon Salt
 
Herb Topping
- ½ cup Breadcrumbs  I used panic
 - ¼ cup Pistachios
 - 1 Tablespoon Parsley
 - 1 Tablespoon Dill
 - ½ Tablespoon Lemon zest
 - 1 Tablespoon Avocado oil
 
 
Make the herby topping
In a food processor, combine the breadcrumbs, pistachios, dill, parsley, oil and lemon zest.
Pulse until fully combined.
Bake the salmon
Add the crumb topping to the salmon and place it on a foil-lined baking sheet.
Bake the salmon for about 15 minutes or until it reaches the desired temperature for your preferred doneness.
Remove from the oven and cut the salmon into 4 oz pieces and divide into 4 servings.
Serve over rice or pair with potatoes and enjoy.
