Ingredients
  

Salmon

  • 1 1 lb Salmon
  • 1 tablespoon Dijon mustard
  • 1 Lemon Zest and juice
  • 1 teaspoon Salt

Herb Topping

  • ½ cup Breadcrumbs I used panic
  • ¼ cup Pistachios
  • 1 Tablespoon Parsley
  • 1 Tablespoon Dill
  • ½ Tablespoon Lemon zest
  • 1 Tablespoon Avocado oil

Instructions
 

  • Preheat oven top 350ºF.
  • In a bowl combine the dijon mustard and the juice of half a lemon. Use the other half of the lemon to garnish the salmon when serving.
  • Coat the salmon with the dijon mustard and sprinkle salt on top.

Make the herby topping

  • In a food processor, combine the breadcrumbs, pistachios, dill, parsley, oil and lemon zest.
  • Pulse until fully combined.

Bake the salmon

  • Add the crumb topping to the salmon and place it on a foil-lined baking sheet.
  • Bake the salmon for about 15 minutes or until it reaches the desired temperature for your preferred doneness.
  • Remove from the oven and cut the salmon into 4 oz pieces and divide into 4 servings.
  • Serve over rice or pair with potatoes and enjoy.
