This easy baked salmon with an herby breadcrumb topping is a simple one-sheet-pan meal that your family will love.

The ingredients in this salmon are easily customizable to your taste. The recipe looks impressive but it is so simple to put together.
In Sam's recipe, he lays the salmon over butterbeans and tomatoes. I decided to serve mine with rice so I omitted those ingredients.
Ingredients
For this recipe I used a whole salmon filet but you can definitely use smaller pieces.
- Salmon: I used wild-caught Alaskan salmon that we bring directly from Alaska every year. My husband loves fishing and I love eating fish!
- Pistachios: They give a nice crunch to the herby topping and the flavor compliments the salmon so nicely.
- Breadcrumbs: The original recipe calls for fresh breadcrumbs but I used plain store-bought breadcrumbs, feel free to use what you have in hand.
- Herbs: Dill and parsley work wonderfully with the salmon. You can use both or either one.
- Lemon: We will use the lemon juice and zest to amp up the flavor of our baked salmon.
- Mustard: We will use a bit of dijon mustard to create a sticky surface on the salmon so the breadcrumb topping sticks to it.
Instructions
Pat the salmon dry and remove the pin bones. I love this stainless steel tweezers for removing the bones from my salmon filets.
Place the herbs, pistachios, lemon zest and breadcrumbs in a food processor and pulse them for a few seconds until they are well combined.
Make a paste with the dijon mustard and lemon juice. Season the salmon with salt and pepper and brush it with the dijon mustard.
Add the breadcrumb mix covering all the surface of the salmon.
Add some lemon slices if you want and bake until to your desired doneness. You can add a few minutes under the broiler to get the topping browned.
How to serve this dish
The original recipe is served over butter beans and tomatoes that are baked along the salmon.
When cooking salmon I prefer to pair it with rice or make tacos. For this recipe a nice serving of rice, pickled onion, tomatoes and greens would be perfect.
Since this salmon is an elevated baked salmon, it would also pair perfectly with smashed potatoes and this creamed corn with Boursin cheese.
Storage and reheating
Store leftover salmon in an airtight container for up to 3 days.
The best way to reheat this salmon is the air fryer at 250F. Cook for 5-10 minutes until the salmon is heated through.
Herby Salmon Tray bake
Ingredients
Salmon
- 1 1 lb Salmon
- 1 tablespoon Dijon mustard
- 1 Lemon Zest and juice
- 1 teaspoon Salt
Herb Topping
- ½ cup Breadcrumbs I used panic
- ¼ cup Pistachios
- 1 Tablespoon Parsley
- 1 Tablespoon Dill
- ½ Tablespoon Lemon zest
- 1 Tablespoon Avocado oil
Instructions
- Preheat oven top 350ºF.
- In a bowl combine the dijon mustard and the juice of half a lemon. Use the other half of the lemon to garnish the salmon when serving.
- Coat the salmon with the dijon mustard and sprinkle salt on top.
Make the herby topping
- In a food processor, combine the breadcrumbs, pistachios, dill, parsley, oil and lemon zest.
- Pulse until fully combined.
Bake the salmon
- Add the crumb topping to the salmon and place it on a foil-lined baking sheet.
- Bake the salmon for about 15 minutes or until it reaches the desired temperature for your preferred doneness.
- Remove from the oven and cut the salmon into 4 oz pieces and divide into 4 servings.
- Serve over rice or pair with potatoes and enjoy.
