Ingredients
  

Chicken skewers

  • 2 Chicken breasts Cut into bite size pieces
  • ¼ cup Grated parmesan
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • Pepper to taste
  • 1 teaspoon Cajun seasoning or chicken seasoning
  • 3 Tablespoons Avocado oil divided

Roasted garlic

  • 1 head of garlic
  • 3 Tablespoons Butter
  • 1 teaspoon Onion powder
  • Chili flakes to taste
  • 2 Tablespoons Mayonnaise
  • Chopped Parsley Garnish

Instructions
 

  • Season the chicken with the spices, salt and pepper. Drizzle one tablespoon of avocado oil and the parmesan cheese.
  • Mix well until the chicken is fully coated in the seasonings. Marinate for 20 minutes. Meanwhile roast the garlic.
  • Cut the top of the garlic head to expose the cloves, drizzle 2 tablespoons of avocado oil and bake at 400F for 20-30 minutes.
  • Add the chicken to the skewers and place them in a baking dish. Bake at 400F for 30 minutes or until the chicken is golden brown and reaches an internal temperature of 165F.
  • Melt the butter, add the roasted garlic, onion powder and chili flakes if using.
  • Stir in the mayo and brush the chicken skewers with the garlic butter.
  • Garnish with parsley and enjoy.
