Season the chicken with the spices, salt and pepper. Drizzle one tablespoon of avocado oil and the parmesan cheese.
Mix well until the chicken is fully coated in the seasonings. Marinate for 20 minutes. Meanwhile roast the garlic.
Cut the top of the garlic head to expose the cloves, drizzle 2 tablespoons of avocado oil and bake at 400F for 20-30 minutes.
Add the chicken to the skewers and place them in a baking dish. Bake at 400F for 30 minutes or until the chicken is golden brown and reaches an internal temperature of 165F.
Melt the butter, add the roasted garlic, onion powder and chili flakes if using.
Stir in the mayo and brush the chicken skewers with the garlic butter.
