These Garlic Parm Chicken Skewers are tender pieces of chicken marinated with spices and dipped in roasted garlic sauce.

Ingredients
- Chicken breast of chicken thighs: Cut into bite size pieces.
- Grated parmesan cheese: Gives the chicken incredible umami flavors and compliments the roasted garlic dipping sauce.
- Paprika: For a smokey flavor.
- Onion salt: I love the combo of paprika, garlic and onion salt.
- Garlic: We will use a whole head of garlic. Roasting the garlic adds sweetness and delicious flavor to the sauce.
- Mayo: To give the sauce a nice creamy texture.
- Butter: As the base of the sauce adds rich flavor and texture.
- Cilantro/parsley: the original recipe uses chopped cilantro but in my opinion parsley compliments the parmesan cheese better.
- I always like to add salt and pepper even if my seasonings have some salt in them. You know your seasonings and your salt tolerance so add salt to taste if you prefer.
Instructions
Cut the chicken into bite size pieces.
Season the chicken with the spices, oil, parmesan and set aside to marinate for 20 minutes.
While the chicken is marinating, make the roasted garlic. Cut the top of the garlic to expose the cloves as much as possible.
Drizzle with avocado oil and wrap in foil or use a mini dutch oven. Bake at 400F for about 30 minutes.
Remove the garlic from the oven. Let the garlic cool down slightly and carefully squeeze the roasted garlic cloves out.
Bake in the oven at 400F for about 30-40 minutes or until the chicken reaches an internal temperature of 165F. Every oven is different so keep an eye on the chicken and flip it over if necessary.
Use a sauce pan to melt some butter, add the roasted garlic cloves, onion powder and red chili flakes if desired. Remove from the heat and stir in the mayo.
Brush the chicken with the garlic butter, garnish with parsley and enjoy.
Storage and reheating
These chicken skewers are best when fresh. I personally do not enjoy the taste of reheated chicken so I do not recommend reheating this recipe.
If you have leftovers they will keep well in the fridge for up to 2-3 days.
I do not recommend freezing this recipe.

- 2 Chicken breasts Cut into bite size pieces

- 1 teaspoon Onion powder
- 1 teaspoon Paprika
- 1 teaspoon Salt
- Pepper to taste
- 1 teaspoon Cajun seasoning or chicken seasoning
- 3 Tablespoons Avocado oil divided
Roasted garlic
- 1 head of garlic
- 3 Tablespoons Butter
- 1 teaspoon Onion powder
- Chili flakes to taste
- 2 Tablespoons Mayonnaise
- Chopped Parsley Garnish
Instructions
- Season the chicken with the spices, salt and pepper. Drizzle one tablespoon of avocado oil and the parmesan cheese.
- Mix well until the chicken is fully coated in the seasonings. Marinate for 20 minutes. Meanwhile roast the garlic.
- Cut the top of the garlic head to expose the cloves, drizzle 2 tablespoons of avocado oil and bake at 400F for 20-30 minutes.
- Add the chicken to the skewers and place them in a baking dish. Bake at 400F for 30 minutes or until the chicken is golden brown and reaches an internal temperature of 165F.
- Melt the butter, add the roasted garlic, onion powder and chili flakes if using.
- Stir in the mayo and brush the chicken skewers with the garlic butter.
- Garnish with parsley and enjoy.
