Tomato Sandwich on Sourdough

1 heirloom tomato Large, about 4 slices salt and pepper to taste I used flaky salt 4 slices sourdough bread 1 tablespoon olive oil 3 tablespoons mayo
Slice the tomatoes into ½ inch thick pieces and season them with salt and pepper. You should get about 4 slices.

Drizzle the olive oil on both sides of the bread and toast it lightly over medium high heat. About 3-4minutes per side turning them constantly.
4 slices sourdough bread, 1 tablespoon olive oil
Spread a layer of mayo on one side of each slice of bread.

Layer the tomatoes on top of the bread with mayo and top with the second slice of bread.
Slice the sandwich in half and enjoy.
