Ingredients
This classic tomato sandwich is all about high quality ingredients.

- Heirloom tomatoes: These tomatoes come in a variety of shapes and colors, their rich flavor that makes them perfect for showcasing in their fresh, natural state. For this sandwich red heirloom tomatoes work best.
- Sourdough bread: This crusty bread is simply the best! The sturdy nature of sourdough is the perfect vehicle to hold the juicy heirloom tomatoes. I make my own sourdough but store-bought works as well.
- Mayonnaise: I like to use avocado oil mayo here but feel free to use your favorite brand.
- Salt and pepper: These 2 ingredients play a key role here. Salt brings out the flavor in the tomatoes and pepper enhances the umami flavor from the tomatoes. I really enjoy using flakey salt to season the tomatoes.
- Olive oil: A drizzle of olive oil to toast the sourdough enhances the overall texture and mouth-feel of the sandwich.
Step by step directions
Step 1: Cut the tomatoes
Slice the tomatoes about ½ inch thick. Season them with salt and pepper.
Step 2: Toast the sourdough bread
Drizzle olive oil on both sides of the sourdough bread slices and lightly toast them in a pan for about 1-2 minutes.

Step 3: Spread the mayonnaise
Spread mayonnaise on the toasted sourdough slices and assemble the sandwiches by layering the fresh tomatoes on one side of the bread and topping with the other slice of toasted bread.
Step 4: Slice and serve
Slice the sandwiches in half and enjoy.


Tomato Sandwich on Sourdough
Ingredients
- 1 heirloom tomato Large, about 4 slices
- salt and pepper to taste I used flaky salt
- 4 slices sourdough bread
- 1 tablespoon olive oil
- 3 tablespoons mayo
Instructions
- Slice the tomatoes into ½ inch thick pieces and season them with salt and pepper. You should get about 4 slices.1 heirloom tomato, salt and pepper to taste
- Drizzle the olive oil on both sides of the bread and toast it lightly over medium high heat. About 3-4minutes per side turning them constantly.4 slices sourdough bread, 1 tablespoon olive oil
- Spread a layer of mayo on one side of each slice of bread.3 tablespoons mayo
- Layer the tomatoes on top of the bread with mayo and top with the second slice of bread.
- Slice the sandwich in half and enjoy.
