    Jam Thumbprint Cookies

    These jam thumbprints are the easiest cookie I've made this holiday season.

    Pantry ingredients that you already have on hand and 30 minutes is all you need to have these cookies ready.

    These cookies are perfectly sweet, buttery and perfect to add a pop of color to any cookie box.

    Complete your cookie box with these basic sugar cookies and Alfajores.

    Ingredients:

    You only need a few pantry staple ingredients to make these buttery cookies. Use a handheld mixer or even a whisk and these come together in one bowl.

    • Flour: all-purpose flour to give structure to the cookies and keeping them crumbly to the bite.
    • Confectioners' sugar: This type of sugar dissolves quickly and gives the dough a soft texture without having to mix the dough for long.
    • Butter: Unsalted, softened butter is best in this recipe.
    • Egg: We are using the egg yolk to add just enough moisture to the dough.
    • Salt: Just a pinch of salt to add flavor to the batter.
    • Vanilla extract: optional but recommended.
    • Jam: in this recipe I used guava jam on top but you can use raspberry or any other jam, curd or spread.

    Recipe instructions

    For this recipe you only need a bowl and whisk or handheld mixer.

    Combine the butter, sugar, vanilla extract and egg yolk and mix well until everything is incorporated.

    Add the salt and flour and mix with a spatula until you form a shaggy dough.

    Finish forming the dough with your hands and divide it into equal size balls. I had about 15 cookie balls.

    Use the back of a spoon to create the center indentations and bake for 12 minutes.

    Half way through baking, I took my cookie sheet out and made sure to deepen the indentations on each cookie.

    Remove them from the oven and use an offset spatula to transfer them to a cooling rack. The bottoms of the cookies should be golden brown.

    Add a dollop of jelly and decorate with sprinkles or nonpareils for a festive holiday look.

    Storage

    These cookies can be stored before being decorated with jam in an airtight container and kept on the countertop for up to 3 days.

    Ingredients
      

    • 6 tablespoons Unsalted butter softened
    • ½ cup confectioners' sugar
    • 1 cup All-purpose flour
    • 1 egg yolk
    • ½ teaspoon vanilla extract
    • ⅛ teaspoon salt just a pinch
    • ¼ cup guava jam raspberry or any other jam work

    Instructions
     

    • Preheat oven to 350°F
    • In a bowl with a handheld mixer add the softened butter and sugar until you form a dough.
    • Add the egg yolk and vanilla extract and mix on low until the egg is fully combined.
    • Add the flour and mix until a shaggy dough forms.
    • Finish forming the dough with your hands and use a cookie scoop to divide the dough into small size balls (about the size of a lime).
    • Place the cookie balls in a baking sheet and using the back of a spoon, create an indentation in the center.
    • Bake the dough for 12 minutes. Half way through baking, remove the sheet from the oven and use the spoon again to make sure the indentations are deep enough.
    • Finsih baking and transfer to a cooling rack.
    • Add about 1 teaspoon of jam in the center of the cookies and allow them to set for 10 minutes. Decorate with sprinkles and enjoy.
