This recipe calls for diced water chestnuts which add a delicious crunch however some people are not fans of this texture so it is something you might consider leaving out.
Ingredients
- Knorr vegetable mix dip: When you buy this, make sure to not follow the recipe in the back as it is for soup and not for this dip. They removed the recipe from the packaging and some people have been misled.
- Cream cheese.
- Mayonnaise.
- Frozen spinach that has been thawed and drained, the recipe calls for 1 bag (10 ounces). I like to use chopped frozen spinach.
- Canned artichokes.
- Water chestnuts.
- Cheddar cheese.
Recipe steps
This recipe comes together pretty quickly.
The only prep required is to chop the water chesnuts, the artichokes and shred the cheese.
Once all the ingredients are mixed all you have left to do is bake the dip and get ready to enjoy it.
What to serve with this hot dip
For this dip I love using rosemary garlic crackers to add even more flavor.
Any cracker works well but I find that sturdy ones are better specially as the dip cools down and becomes harder to scoop out.
Leftovers
If you have leftovers, store them in an airtight container in the fridge for up to 3 days.
I do not recommend freezing this dip as it will have a different texture once reheated.
Original Spinach Dip
Ingredients
- 1 bag frozen spinach 10 oz bag, thawed and squeezed dry
- 1 cup cream cheese 1 (8 oz) package, softened
- ¾ cup mayonnaise
- 1 cup cheddar cheese shredded, divided
- 1 packet Knorr vegetable recipe mix Do not mix with water as instructed in the new package.
- 1 cup water chestnuts 1 (8 oz) can. Chopped.
- 2 cups artichoke hearts 1 (14 oz) can. Chopped
- 2 cloves garlic finely chopped
Instructions
- Preheat oven to 350°F with a rack placed in the center.
- Combine all the ingredients in a bowl except ½ a cup of cheddar cheese.
- Mix well until you achieve a uniform consistency.
- Spoon the mixture into a 2-quart casserole dish. Top with the remaining cheddar cheese.
- Bake for 30-35 minutes until the cheese has melted.
- Serve with crackers and enjoy.
