- Chicken: You can use a rotisserie chicken for convenience. I used 2 chicken breasts I cooked on my Instantpot.
- Red Lobster Biscuit Mix: This will give the top crust to our pot pie style dish.
- Cream of chicken: This will help moisten all the ingredients in our chicken casserole.
- Carrots and peas: A bag of frozen carrots and peas is what the original creator used. You use use your favorite veggie mix. This will also be great with broccoli.
- Milk: Full fat milk to stir our biscuit mix.
- Chicken stock: This will add extra flavor and help all the ingredients cook evenly.
- Butter: to prevent the chicken from sticking to the bottom of the baking dish.
Instructions
This chicken cobbler comes together quickly. Use rotisserie chicken for an even quicker meal.
Fist melt the butter and add it to the bottom of your baking dish. Layer the cooked chicken and add the bag of frozen veggies.

In a separate bowl, mix the Red Lobster cheddar biscuit mix with the milk and pour it on top of the chicken and veggies mix.
In another bowl, mix the cream of chicken soup and the chicken stock until well combined. Pour it over the chicken mixture.
Follow the steps without mixing the ingredients, just pour and layer them as is. It looks off but trust the process.

What to serve with chicken cobbler
This dish is a meal on its own. You can compliment this dish with a nice fresh salad and you are all set.
A nice fresh romaine salad with caesar dressing or arugula with lemon and parmesan cheese would go great with this dish.

I made this because I wanted something comforting and cozy to eat during the rainy cold weather we’ve been experiencing here in the Midwest. I added a big handful of shredded cheddar to the biscuit mixture and baked it for an extra 5 minutes to get a bit more brown. This is very tasty! I think some fresh sage and parsley would be a good addition, but that would take away a little bit from the ease of this recipe and it is certainly still really good without it.

Thanks for trying the recipe!

Any suggestions how to reheat leftovers( i made a dohble vatch and yes had leftovers ! ) lol
Isabel
I think in a small baking dish in an air fryer would be great so the top stays nice and crispy.

My family and I tried this recipe and it was delicious. We did add a few more ingredients (Onions and Celery). Overall, I will be making this again so I can share with friends.

Thank you Sandra! Those sound like great add ons.

You mentioned you would change things next time - what would you change?

Hi! I made it again and instead of dumping the ingredients like the original creator suggested I mixed the thawed vegetables, shredded chicken, 1 can of chicken soup, and only 1 cup of chicken stock. Added a dahs of paprika, 1/2 teaspoon onion salt, 1/2 teaspoon garlic powder. Mixed it well until everything was combined and placed it in the buttered dish.
Then topped it with the biscuit mix (biscuit and milk per instructions on the recipe).
The result is more flavorful and the biscuit layer is fluffier and thicker.
I liked both but the second one definitely had more flavor.
Hope you give it a try!
Caitlin
Hi there, I found that the 2 cups of both milk and chicken stock was a bit too much so I decreased it too 1 cup each. Also, I added a layer of cheese in between the biscuit layer and the soup layer. So that way the cheese wouldn’t burn as much. And it have a crispy top. I’m curious to try it later.
