Ingredients:
For Tini's ham recipe you will need a few ingredients besides a spiral ham.
- Spiral ham: Bone in is best.
- Dijon mustard: To add a little zing to the marinade.
- Chipotle Tabasco sauce: Adds a mild heat and lots of smokey flavor. You can get this sauce at any grocery store. You will end up using a whole 5 oz bottle of Chipotle tabasco.
- Maple syrup: Goes really well with the salty ham flavor. You can use honey as a substitute.
- Orange juices and zest.
- Brown sugar.
- Spices: Garlic, onion powder, smoked paprika, cinnamon, cloves, salt and pepper.
- Apple cider vinegar.

Tini's Holiday Ham
Ingredients
Ham seasoning
- 1 10 lb. Ham bone in, spiral sliced.
- ½ cup Dijon mustard
- ¼ cup Chipotle Tabasco sauce
- ¼ cup Brown sugar packed
- Orange zest
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Smoked Paprika
- Salt and pepper to taste
- ½ teaspoon Ground cinnamon
- ½ teaspoon Ground cloves
- 1 cup Orange juice.
Ham glaze
- ½ cup Butter 113 grams
- ¼ cup Maple syrup Or honey
- ½ cup Chipotle Tabasco sauce
- ½ tablespoon Apple cider vinegar
- ¼ cup Brown sugar
- Rosemary sprigs
Instructions
- Preheat the oven to 350°F.
- Place the oven rack in the bottom third to avoid burning the top of the ham.
- In bowl whisk together the dijon mustard, chipotle tabasco (¼ cup), brown sugar, orange zest, garlic powder, onion, powder, cinnamon, cloves, salt and pepper until you form a paste.
- Brush it over the ham and place it on a roasting pan with a rack.
- Add the orange juice to the bottom of the roasting pan.
- Place it in the oven, uncovered and bake for 15 minutes.
Make the glaze
- In a sauce pan, over medium heat, combine the butter, maple syrup, chipotle tabasco sauce (1 cup), apple cider vinegar, brown sugar and rosemary (about 1 sprig)
- Bring to a gentle boil and remove from the heat.
- Brush some of the glaze over the ham and return to the oven. Repeat every 30 minutes until the ham reaches internal temperature of 145°F.
- My 10 lb. ham took about 2.5 hours.
