    Elote seasoning creamy cauliflower rice

    You know I love Everything but the Elote seasoning from Trader Joe's. Besides adding it to my creamy corn recipe, I love adding it to other dishes.

    How to use Everything but the Elote Seasoning

    I discovered this seasoning at Trader Joe's a few months back and it has been a staple ever since.

    If you don't have a Trader Joe's in your area, you can order the Elote Seasoning from amazon here.

    Similar to the Everything but the Bagel seasoning, this one is meant to be added to corn or Elote to recreate the traditional Mexican street corn.

    I have a review of this seasoning and how you can recreate it at home with some common spices that you probably already have in your pantry.

    Remember that if you make the homemade version, you need to add cheese to balance the spices.

    Keto-Friendly Recipe

    This recipe is quick and easy to make to make. It happens to be keto-friendly and low-carb and it's chockfull of flavor.

    The Elote seasoning gives the cauliflower rice a nice flavor and the cheese adds texture. You won't miss corn in this recipe!

    This recipe is a perfect summertime dish. I love to eat it with chicken and add an easy simple salad.

    Ingredients

    All you need for this recipe are 4 easy ingredients; you need riced cauliflower, cheese, cream cheese and Everything But The Elote Seasoning. I add a pinch of salt and pepper too.

    You can also use fresh cauliflower to make this recipe. Just chop it in small chunks that look like rice (I use a food processor) and then cook it with the rest of the ingredients.

    You can use any cheese you want, but I like to use the Mexican blend of white and yellow cheese that supermarkets sell. If you'd like a little more spice, pepper jack cheese would be great in this dish.

    Ingredients
      

    • 2 Cups riced cauliflower
    • ⅓ cup cream cheese
    • 1 cup cheese
    • 1 teaspoon Everything but the Elote seasoning Trader Joe's
    • Salt and Pepper to taste

    Instructions
     

    • In a skillet soften up your cream cheese over medium heat
    • Add your riced cauliflower until well incorporated
    • Add your Everything but the Elote seasoning
    • Add the cup of cheese, pepper and salt to taste
