Ingredients
You can tweak this recipe to your liking and add your own spin. I tried to follow the recipe as shared on TikTok but will definitely make some adjustments next time I make it.
- Chicken: You can use a rotisserie chicken for convenience. I used 2 chicken breasts I cooked on my Instantpot.
- Red Lobster Biscuit Mix: This will give the top crust to our pot pie style dish.
- Cream of chicken: This will help moisten all the ingredients in our chicken casserole.
- Carrots and peas: A bag of frozen carrots and peas is what the original creator used. You use use your favorite veggie mix. This will also be great with broccoli.
- Milk: Full fat milk to stir our biscuit mix.
- Chicken stock: This will add extra flavor and help all the ingredients cook evenly.
- Butter: to prevent the chicken from sticking to the bottom of the baking dish.
Instructions
This chicken cobbler comes together quickly. Use rotisserie chicken for an even quicker meal.
Fist melt the butter and add it to the bottom of your baking dish. Layer the cooked chicken and add the bag of frozen veggies.
In a separate bowl, mix the Red Lobster cheddar biscuit mix with the milk and pour it on top of the chicken and veggies mix.
In another bowl, mix the cream of chicken soup and the chicken stock until well combined. Pour it over the chicken mixture.
Follow the steps without mixing the ingredients, just pour and layer them as is. It looks off but trust the process.
What to serve with chicken cobbler
This dish is a meal on its own. You can compliment this dish with a nice fresh salad and you are all set.
A nice fresh romaine salad with caesar dressing or arugula with lemon and parmesan cheese would go great with this dish.

I made this recipe tonight. The only substitution was frozen mixed vegetables. It was so easy & turned out yummy! I had no issue whatsoever with it having too much liquid but I did extend cooking time for another 5 minutes so that the whole top was baked & browned.

Feeding 10. So if I double the recipe what size dish do you think I would need? I have a 15x10x2” or a 9x13x3”

Ugh I'm not quite sure. Could you split it into 2 baking dishes? Let me know how you went about it and how it turned out.

Ok so I’ve made this a few times now and here is what I do different… firstly, I don’t use garlic powder. I use fresh (or those convenient frozen cubes) garlic and mix it with 1.5cup broth and cream of mushroom soup. So, decreasing the broth and using cream of mushroom instead of chicken. I also pour that in BEFORE the biscuit layer. For the biscuit layer, I mix in the biscuit topping, plus a cup of freshly shredded cheddar cheese. Comes out beautiful, tasty and not soupy! My family was complaining it was a little bland before all my variations.

Happy to hear you made it your own!

I agree with pouring thr biscuit mix on the top. I could never get it to rise and brown without being dense and gummy. (could be user error)
Thanks for the tip about the cheese, that pushed ot over the top!
